St Patrick’s Day Cocktails

St Patrick’s Day last year was a slight disappointment, everyone was plunged into a lockdown and celebrations had to take place in the home. This year the tables have turned and there will be celebrations all round, from living in Ireland for a year I can vouch for the revelry!

The Irish are known for their love of a tipple, and what great tipples they produce! A few weeks ago we touched on the growing English whisky scene, well this is the same case in Ireland with a growing range of new distilleries not just making whiskey but fantastic gins and vodkas. 

But it isn't pints of the black stuff we will be indulging in. In this week’s blog we create some delicious cocktails showcasing Irish spirits that are perfect for St Patrick’s Day. 

The Pogues Strawberry Mule - SplitsDrinks

The Pogues Strawberry Mule

It is hard to imagine Shane MacGowan knocking back a strawberry cocktail while slurring out the words to Fairytale Of New York. But the light profile of the whiskey made in their honour is perfect for light refreshing cocktails.

In a shaker add the strawberries and muddle, add the whiskey, lemon juice, syrup, ice and shake well. Fine strain into a highball glass filled with ice and top with the ginger beer. 

The Sexton’s Boulevardier - SplitsDrinks

The Sexton’s Boulevardier

The Boulevardier is a variation of the classic Negroni. Made traditionally with bourbon but we have added an Irish twist with the addition of The Sexton Irish Whiskey. This whiskey has also been aged in sherry casks, to emphasise the sherry notes we have added a drop of liquid mince pie, Pedro Xeminez Sherry. 

Add all of the ingredients to a mixing glass filled with ice and stir to chill. Fine strain into a rocks glass filled with ice and garnish with orange zest. 

An Irish Brunch - SplitsDrinks

An Irish Brunch

This is more of a liquid brunch which is apt on the day itself, although an Irish breakfast wouldn't go amiss to line the stomach. This cocktail is based on the classic Breakfast Martini developed by legendary bartender Salvatore Calabrese, but the gin has been replaced by whiskey.

  • 50ml Jameson Orange
  • 60ml Black Tea (without milk)
  • 25ml Lemon Juice
  • 10ml Sugar Syrup
  • Bar Spoon of Marmalade
  • Dash of Angostura Bitters

Add the ingredients to a cocktail shaker filled with ice and shake well. Strain into a highball glass filled with ice and garnish with a slice of lemon.

Tropical Whiskey Highball - SplitsDrinks

Tropical Whiskey Highball

Tropical and Ireland are two things that you very rarely put together. But the flavours in Teeling Small Batch work perfectly with the pineapple flavours duo to the whiskey being finished in ex-rum casks. This is a refreshing cocktail that makes a perfect aperitif.

  • 50ml Teeling Small Batch
  • 12.5ml Pineapple Syrup (equal parts pineapple juice and sugar)
  • Squeeze of Lime Juice
  • Soda Water

Add all of the ingredients to a highball glass filled with ice and top with soda water. Garnish with a wedge of lime. To make the pineapple syrup add equal parts pineapple juice and sugar to a saucepan and boil until a syrupy consistency.  

Muff Flutter - SplitsDrinks

The Muff Gin Flutter

This cheekly named cocktail is made using gin from craft distiller Muff Liqour. It is the perfect cocktail for those who love an Aperol Spritz but with a fruity twist.

  • 25ml Muff Liqour Gin
  • 25ml Aperol
  • 25ml Lemon Juice
  • 25ml Raspberry Syrup
  • Raspberry Garnish

Add all of the ingredients apart from the raspberries to a cocktail shaker filled with ice and shake well. Strain into a wine glass filled with crushed ice and garnish with the raspberries. 

Pickleback - SplitsDrinks

The Pickleback

We are finishing with a shot that will certainly get the party started on St Patrick’s Day. It is an interesting combination of Irish whiskey and pickle brine, yes from a jar of pickled gherkins! The umami flavours of the brine work perfectly at combating the burn of the alcohol.

Do a shot of whiskey and then a shot of brine and savour those savoury flavours.
